I have bricks that I've had for years and never had issues with. I flash and reprogram my bricks a LOT. Some friends of mine that write firmwares for the NXT probably do this even more. I have only ever heard of a flash failure once and that was someone who deliberately went ahead and did file IO non-stop. This eventually, after a LOOONG time caused failure. Keep in mind that if the brick fails because of this, you can easily get LEGO to replace if for you.
I wouldn't worry about it, if I were you.

I'm afraid you can't just load it into RAM and not Flash. I believe nxtOSEK does support this, though, but nxtOSEK is a lot more complicated than ROBOTC. It also means that programs can only be very small (64K) since that is the amount of RAM on the ARM chip.
